Behind the Islay Cask Company is a group of five Islay-loving whisky enthusiasts from Germany who in 2017 fulfilled their dream of bottling their own whisky cask and subsequently became a small independent bottler with a focus on Islay. The Kilchoman single cask bottling mentioned here, “Gardener’s Choice: Allium”, was this very first release, which was to be followed by numerous others in the coming years, including two 12-year-old Kilchoman whiskies from the Private Cask programme.

The whisky was first matured for almost 5 years in a fresh ex-bourbon barrel before being finished in a Pedro Ximénez sherry cask for 8 month.
