Sauternes Cask Finish 2018 Edition

On 1 October 2018, the “Sauternes Cask Finish 2018 Edition” will be released, a vatting of 30 bourbon barrels from 2012 that have undergone a 5-month finish in Sauternes Hogsheads.

The release is the second Sauternes bottling in the series of annual limited releases from different wine casks that began in 2014. While the previous representatives of the series were fully matured in Port, Madeira, Sauternes or Red Wine casks, Anthony Wills said that the aim was to take a slightly different approach with the Sauternes wine finish, which should lead to a more balanced character between the honey-sweet notes of the Sauternes casks and the characteristic mixed fruit und peat smoke of the Kilchoman destillate. With the first Sauternes Limited Release, the Sauternes Cask Matured 2016 Edition, the Sauternes character still outweighed the Kilchoman distillery character too much.
